Old Fashioned Coleslaw

This is old school, picnic and cook out coleslaw that goes well with ribs, sausage or meatloaf sandwiches or any other barbecued foods. If you don’t need to serve quite as many people, simply halve the recipe.

Serves 8-10

2 pounds cabbage, shredded
6 carrots, peeled and shredded (about 1 cup)
2 ounces sugar (about 1/3 cup)
1/2 medium onion, finely chopped
2 tablespoons cider vinegar
1 cup high quality mayonnaise
2 tablespoons Dijon mustard
1 teaspoon caraway seeds, ground in a mortar and pestle
salt and freshly ground black pepper, to taste

Combine all ingredients and chill for at least 1 hour.
